Twisted Willow Five Course Menu-Mushrooms may vary based on availability.
First course
Sweet Potato Waffle- Chicken fried oyster mushroom, bourbon sorghum syrup, roasted hazelnuts.
Second course
Shaved Mushroom Salad- King trumpet, criminology, lion’s mane, enoki, honey mascarpone, greens, citrus vinaigrette, crisp fried shallots.
Third course
Scallop- Seared scallop, whole wheat cous cous, oyster, crimini & shiitake mushroom raisin goulash, baby greens.
Fourth course
Veal Loin- Porcini crusted seared veal loin, kabocha squash & shiitake ravioli, broccoli rabe, Rioja demi glace, pickled chanterelles.
Fifth course
Mushroom Bread Pudding- Maitake & beech mushroom bread pudding, vanilla bean ice cream, candy cap salted caramel.

Wisconsin Mycological Society (WMS) is dedicated to the study and enjoyment of mushrooms and other fungi throughout the state of Wisconsin. Education, safety, sustainability, community, and connecting with nature are our goals.  We are affiliated with NAMA, along with our 2 other Wisconsin Clubs, the Madison Mycological Society and the Northwestern Wisconsin MycoEnthusiasts.

We do not ID mushrooms through this website. 
If you are in need of an ID consider uploading quality photos and descriptions of your find to Mushroom Observer or iNaturalist including our projects or post in Wild Food Wisconsin or Mushroom Identification Group.
